The afternoon from start to finish

What goes on the fire, and when

A braai is an order of events, not a list. The fire cools down as the afternoon goes on, and every dish has its place in that. Left to right: what goes on the hot grid first, and what comes last. The figure on the right is how long it needs at the fire.

  1. Done beforehand

    Made in the kitchen. On the table before you light up.

  2. First on the fire

    Goes on first, while the coals are at their hottest — steaks, thick chops, and anything that sits in a pot for hours.

  3. The main round

    The actual food: wors, chicken, fish, skewers.

  4. Once the meat is off

    The coals are dropping off. Now bread and braaibroodjies go on.

  5. Right at the end

    Pudding in the last of the heat — or something that needs no fire at all.
