Cape Malay oxtail potjie

Oxtail with red wine, cumin and curry, four hours in a three-legged pot. Four hours, three and a half of which ask nothing of you.

Oxtail is cheap meat with a great deal of connective tissue that only breaks down into gelatine after hours. The Cape Malay version seasons it with cumin, coriander and curry rather than herbs alone — the same spice cupboard as sosaties and bobotie.

When it goes on

First on the fire

Goes on first, while the coals are at their hottest — steaks, thick chops, and anything that sits in a pot for hours.

Method

  1. Light the fire

    An hour before you start. Four hours of steady coals wants dense wood — kameeldoring or black wattle, not rooikrans.

  2. Flour the meat

    Pat the oxtail pieces dry and turn them in the seasoned flour. The flour browns with the meat and thickens the sauce later.

  3. Brown bacon and meat

    Heat butter and oil in the pot, render the bacon and lift it out. Brown the oxtail hard, in batches. Never a full pot, or the meat steams.

  4. Vegetables and spices

    Soften onions, leeks and garlic in the fat. Add cumin, coriander and curry powder, toast for a minute, then stir in the tomato paste and let it darken slightly.

  5. Deglaze

    Deglaze with wine and stock, scraping the base, and add Worcestershire, bay and thyme. Return meat and bacon to the pot.

  6. Three hours covered

    Lid on, coals down to a third. The pot should barely mutter. For three hours do nothing but check the liquid and feed the fire every 30 to 40 minutes.

  7. Add the vegetables

    Layer carrots and baby onions on top of the meat without stirring. Another hour, with the mushrooms added for the last 20 minutes.

  8. Reduce and season

    Take the lid off and reduce for 20 minutes until the sauce is thick and glossy. Only then lift everything through carefully, season and serve straight from the pot.

Tips

  • Oxtail is only good when the meat comes off the bone with a fork. At three hours it is tough, at four it is soft — that is not a tolerance, it is a threshold.
  • It is better the next day. If you can, cook it ahead and reheat it at the fire; the gelatine sets overnight and the sauce turns dense.
  • Skim the fat before the lid comes off. Oxtail gives up a lot of it, and in a reduced sauce it is too much.

Oxtail is a textbook case of why the potjie exists. The meat is largely collagen, which breaks down into gelatine over hours at low temperature — and a cast-iron pot over low coals does that better than any hob.

The threshold sits at about four hours and is surprisingly sharp. At three hours the meat still clings to the bone; an hour later it falls off, and the sauce has a body flour cannot reproduce.

The Cape Malay seasoning is not decoration. Cumin, coriander and curry survive the long cook better than fresh herbs and lie over the strong flavour of the meat instead of fighting it.
